wilsonville day

I am way behind on my updates and will try to catch up a little this week...

We spent a few Saturdays ago in Wilsonville with the whole family. We had so much fun!

First, what's a full day without a parade? (Turns out I took zero pics of the parade itself. Bizzare, I know.)




And some fountain play...



It's all fun and games until somebody gets hurt...

Fortunately, that sweet little girl recovered from her run-in with The Big Headed Boy :). After the fountains, we had some delicious lunch at Chipotle and then back to M, M & O's for swimming!



Nate pretended to nap in Owen's big boy bed while the big kids swam.

And, as if it could have gotten any better, we ended the day with salmon on the grill. YUM! Thanks Mere and Matt for hosting a fabulous day!

we grew something!

We actually grew something!


Dan used lettuce from our garden last night and made a delicious salad! Fixins' included cranberries, slivered almonds, garbanzo beans and turkey bacon, all topped with balsamic vinegar and olive oil dressing. He paired it with multigrain pasta. It was just about my ideal meal!

memorial day on the oregon coast

You didn't actually think the Oregon Kaplans sat around the house on Memorial Day and did nothing, did you? :)

Nope! We ventured out to the coast for the day!














Sophia loved collecting shells, rocks and other ocean treasures. She also loved the water even though it was pretty darn cold. Nate enjoyed playing in the sand and watching the birds, kites and small airplanes fly overhead.


Even a little traffic on our way home couldn't ruin this perfect day.

First of all, I can now pucker up and kiss with my mouth closed. (Photo to follow someday when I catch him in action.)

And...I can eat and entire meal with a fork!

garbanzo bean yumminess


This is my new favorite dish:

1 can organic garbanzo beans
1 ripe avocado
1 leek
1 lime
garlic powder

Drain the garbanzo beans and mix together with the chopped ripe avocado and thinly sliced leek. Cut the lime in half and squeeze the juice out of both halves onto the bean mixture. Stir. Add garlic powder to taste.

A few nights ago, I paired it with some fresh sourdough bread.

Don't knock it til you try it. It's pretty darn yummy.
